Cherry Ripe

Ingredients

  • 1 cup cacao 
  • 1 cup frozen pitted cherries
  • 1/2 cup desiccated coconut 
  • 3/4 cup coconut oil 
  • 1 teaspoon vanilla essence 
  • 1/3 cup Agave (or your favourite natural sweetener) 
  • Pinch Salt

Method

Line a small baking dish or plastic container with baking powder.  Ensure you coconut oil is liquefied, if not put your 3/4 of a cup in a bowl and rest it on top of another bowl filled with boiling water – it should melt in seconds.  Place cacao, coconut oil, vanilla, pinch salt and agave in a bowl and give it a good mix. Place into food processor with coconut and cherries and combine.  Spoon out mixture onto baking paper into a nice square and place in the freezer. Once set cut into squares or bars and enjoy.
