Sweet Potato & Lentil Soup

Ingredients

  • 1 sweet potato – chopped
  • 4 parsnip – peeled + chopped 
  • ¾ cup Red dried lentils 
  • 1 brown onion – chopped 
  • 1 clove garlic – minced 
  • 2 teaspoons curry powder 
  • Salt / Pepper 
  • 1.5-2 litres of water 
  • Serve with Greek yoghurt and coriander.

Method

In a pot place sweet potato, parsnip, lentils, onion, garlic, curry powder and water.

Cover and cook for 25 minutes until vegetables are soft.

Blend with stick blender or processor until smooth.

Serve with Greek yoghurt +Coriander
