Quinoa & Chicken Meatloaf

Ingredients

  • 500 grams chicken mince
  • 1 cup quinoa (cooked) 
  • ½ Cup Mushrooms – chopped 
  • 2 Garlic cloves – minced 
  • 1 Onion – finely chopped 
  • Grated Zucchini 
  • Grated Carrot 
  • ¾ cup Rice crumbs 
  • 2 tablespoon Tamari 
  • 2 tablespoon Maple Syrup 
  • 1 egg

Method

Preheat oven to 180 degree Celsius. Line a loaf tin with baking paper.

Cook Quinoa according to instructions or cook in your rice cooker. Once cooked set aside to cool.

Place all ingredients into a bowl and give a good mix together. Pour into loaf tin, flatten the top out with a fork and place in the oven for 45 minutes or until cooked.
