You don’t have to go without your pancakes if you are focusing on eating well and training hard.

Here is an amazing recipe I created which makes a great treat for any morning or weekend!

Maintain

Ingredients:

  • ¼ cup chocolate protein powder
  • ¼ cup wholemeal spelt flour
  • ¼ rolled oats
  • ½ teaspoon Baking Powder
  • 1 dessert spoon of Xylitol (100% natural sugar free sweetener – tastes great)
  • Pinch of Celtic Salt
  • 1 dessert spoon Cacao Butter (tastes so good)
  • 1 egg (whisked)
  • ¼ cup water (if needed add a little more water)
  • Topping:
  • 2 dessert spoons of greek yoghurt
  • 1 tsp cinnamon
  • Raspberries (I used frozen ones)

Method:

In a bowl add protein powder, flour, oats, baking powder, Xylitol and salt – mix together. Warm on gentle heat the Cacao butter till it liquefies and let it cool. In a separate bowl add egg, water and Cacao butter and mix. Add wet ingredients to dry ingredients and combine. Pour onto a non-stick pan (to avoid sticking spray pan with a bit of coconut oil spray if you have it), then flip over. For the topping mix yoghurt and cinnamon together then add raspberries on top. Enjoy x
