  • ¼ cup (60mL) Tamari (gluten-free soy sauce)
  • 1 tbsp pure maple syrup
  • 1 tsp lemon juice
  • 2 pieces barramundi fillet or other firm white fish, about 100-150g per fillet


Preheat the oven to 180 degrees Celsius.

In a small bowl, mix tamari maple syrup and lemon juice, season with salt and pepper and stir until combined. Lay out two pieces of foil large enough to complete cover the fish.

Dip barramundi into marinade so it is coasted, then place onto foil and wrap up. Place barramundi fillets into baking dish and bake for 20 minutes or until cooked. Serve with vegetables or salad.

NB: you can marinade the fish overnight in the fridge. Tamari is sweet version of so sauce and works very well with the maple flavour. Feel free to skip the pre-roasting process and use dry-roasted almonds.
