This is a really quick and easy weekend dinner that will not only satisfy you but fill you with goodness!

Weightloss / Shred / Maintain

Ingredients:

  • 2 eggs
  • 3 mushrooms
  • 1/2 zucchini (courgette)
  • ¼ capsicum (pepper)
  • 2 tsp tabasco sauce
  • ¼ tsp cayenne pepper
  • 1 clove garlic
  • 1 spring onion

Method:

Pre-heat sandwich press. In a bowl add in eggs and whisk together then add in tabsaco sauce, salt, pepper and cayenne pepper – mix well. Chop up zucchini, mushroom, capsicum and spring onion into smaller pieces. Mince garlic. In pan lightly spray with olive oil or simply use a non-stick fry pan. On a medium heat add in garlic, spring onions, capsicum, zucchini and mushroom – stir fry for 5 minutes until ingredients have warmed through. Meanwhile pour egg mixture onto sandwich press so it resembles a circle, cook for 2-3 minutes on each side. Once omelette is cooked lay it on a plate and top with mushroom mixture on one side of the omelette then fold the omelette over the top.
