This is one of my favourite summer salads. It looks beautiful served at a BBQ and tastes amazing too.

Weightloss / Shred / Maintain

Ingredients:

  • 6 Chicken tenderloins
  • 1 teaspoon curry powder
  • 1 teaspoon paprika
  • ½ teaspoon cayenne pepper
  • 1 small avocado
  • ½ cup slithered almonds
  • 8 strawberries – cut in quarters
  • Rocket, enough to cover serving bowl
  • ½ cup Feta – crumbled
  • Balsamic and herb dressing – Praise Zero

Method:

Combine spices together and lightly coat chicken. Place chicken on sandwich press for a couple of minutes with the lid down until cooked or cook in a non-stick pan. Set chicken aside.

 

Place slithered almonds on sandwich press or non-stick pan and stir around with wooden spoon until lightly golden brown.

 

Slice avocado into thin strips, slice chicken into strips as well.

 

On your serving plate place rocket on the bottom then enjoy decorating with the chicken, almonds, avocado, strawberries and feta. To finish off drizzle some dressing over the top and serve x
