An easy, tasty lunch meal.

  • 2 x Rice paper sheets 22cm
  • ½ cup firm tofu organic
  • 2 tsp seeded mustard
  • 1 Lebanese cucumber
  • ¼ capsicum
  • 1 cup baby spinach leaves


Slice tofu into strips along with capsicum and cucumber.

Fill a shallow bowl with warm water, submerge rice paper sheets in the water one at a time for a minutes, then place onto a plate and top with tofu, cucumber, capsicum, seeded mustard and spinach leaves.

Roll each wrap up and enjoy.
