This is a super sweet recipe that is jam packed full of flavour and high in nutritional value. The perfect meal 3 option! #supersalad

Ingredients:

  • 1/2 cup grated sweet potato
  • 1 Apple
  • 1 Lebanese Cucumber
  • 1/4 Capsicum
  • 2 Chicken Tenderloins
  • 3 Cherry Tomatoes
  • 2 Spring Onions
  • 1 cup chopped Kale
  • 1/2 Lemon
  • 1/2 tsp Paprika
  • 1/4 tsp Curry Powder

Method:

Grate sweet potato and apple. Sprinkle paprika and curry powder onto sweet potato. Cook chicken lid down on sandwich press for 5 minutes. Chop tomatoes, cucumber, kale, capsicum and spring onions. Roughly shred chicken. Add everything to a bowl and drizzle with a squeeze of half a lemon.
