Grate sweet potato and apple. Sprinkle paprika and curry powder onto sweet potato. Cook chicken lid down on sandwich press for 5 minutes. Chop tomatoes, cucumber, kale, capsicum and spring onions. Roughly shred chicken. Add everything to a bowl and drizzle with a squeeze of half a lemon.
