Rich but oh so good – one word ‘YUM’.

This recipe take a little bit of planning as you must allocate time for soaking and freezing but it is well worth the wait!

Maintain

Ingredients:

  • 1 cup dates
  • 1 cup almonds
  • 2 cups cashews (soaked for 2 hours)
  • ½ avocado
  • 2 bananas
  • 3 tablespoons cacao powder
  • 3 tablespoons brown rice syrup
  • 1 tsp vanilla essence
  • 3 tablespoons cacao powder
  • 3 tablespoons coconut oil

Method:

Line a square 20×20 baking dish with baking paper.

BASE: Place dates and almonds into processor and blend until they stick together. Pour into dish and flatten out with the back of a spoon. Place in the freezer.

MIDDLE: Place cashews, avocado, banana, cacao, brown rice syrup and vanilla into processor and blend until smooth. Pour over base and place back into the freezer for 6-8 hours until set.

TOP: Once middle has been set, melt coconut oil, cacao powder together in a small saucepan over medium heat. Then pour over the dish and place back into the freezer until set – then enjoy x
