These healthy little treats are amazing – give them a try this weekend?

Ingredients:

  • Biscuits
  • 1 cup Walnuts
  • 1 cup puffed Millet
  • 1 cup dried cranberries
  • 1 tablespoon low fat cottage cheese
  • 1 dessert spoon of coconut oil
  • Filling
  • 2 banana’s
  • 2 teaspoons Cinnamon
  • 1 dessert spoon chia seeds

Method:

Place bananas and cinnamon in a processor and blend until smooth. Place in a bowl add in chia seeds give a good mix, place glad wrap over the top and place in the fridge to set – the longer in the fridge the better (I usually leave it in the fridge overnight but an hour should be fine).

Place walnuts and millet in a processor and mix under they have broken down, add in cranberries, cottage cheese and coconut oil and mix until mixture all comes together.

Place mixture onto baking paper, place another sheet of baking paper over the top, roll mixture out with a rolling pin then cut into small circles (I used an egg cup), place circles on baking paper and place in the oven on 160 degrees for about 10-15 minutes, keep an eye on them so they don’t burn. Take them out and let the cool and crisp up.
Place banana mixture into a piping bag (or just spoon it on) and pipe onto biscuits and place another biscuit on top. Enjoy!
