Easy lunch option

Weight loss / Shred / Maintain

Ingredients:

  • ½ cup rolled oats
  • 1 small sweet potato
  • ¼ cup black beans (425g canned)
  • 1 tbl tomato paste (140g)
  • 1 tsp paprika

Method:

Pre-heat sandwich press.

Peel and chop sweet potato into small bits, steam for 10-15 minutes until the sweet potato becomes soft. In a bowl add oats, black beans, tomato paste and paprika – mix well. Then add in cooled sweet potato and mix through until ingredients are combined.

Form mixture into patties, this should make 2-3 patties, serving size is one.

Place patty onto the sandwich press and heat through for 2 minutes on each side and enjoy with some greens/salad.
