Easy and quick afternoon tea snack!

Ingredients:

  • ½ cup (125g) low-fat cottage cheese
  • 1 tsp smoked paprika
  • 1 tsp chopped chives
  • ¼ tsp cayenne pepper
  • 2 slices smoke salmon
  • 2 Lebanese (short) cucumber

Method:

In a bowl, combine the cottage cheese, smoked paprika, chives and cayenne pepper. Season with salt and pepper and give it a good mix.

Wash the cucumbers and remove the ends, then cut them in half lengthways.

Spoon the cottage cheese mixture onto each boat and top with smoked salmon.
