This is a great recipe to replace the usual sugar loaded Banana bread. It has no refined sugar and tastes amazing!

Ingredients:

  • 2 cups of Spelt flour
  • 1 tsp Baking powder
  • ½ tsp Baking soda
  • ¾ cup Xylitol
  • 1 tsp Cinnamon
  • Pinch Salt
  • 1 Tablespoon Coconut Oil (Melted)
  • 1 Egg
  • 1 Egg White
  • 200g Tub Greek Yoghurt
  • 1 tsp Vanilla
  • 1 Cup Cherries (frozen is fine )

Method:

Grease and line a loaf tin with baking paper. In a large bowl place spelt flour, baking powder, baking soda, xylitol, cinnamon and salt – mix till combined.
In a separate bowl place coconut oil, egg, egg white, yoghurt and vanilla – mix till combined. Make a well in the middle of dry ingredients and pour in wet ingredients and mix until just combined, then fold through cherries.
Pour mixture into loaf tin and bake at 180 degrees for 30-40 minutes, pierce a skewer in the middle to see when cooked.
