Ingredients:

  • 6 green prawns
  • ½ head of cauliflower
  • 1 clove of garlic
  • 1 small onion
  • 1 carrot
  • ¼ cup peas – frozen
  • ¼ cup corn

Method:

Peel and chop carrot. Mince garlic, chop onion. Place cauliflower into a food processor and process until you reach rice consistency.

In a non stick pan add onion and garlic and saute until onion is translucent. Then add in cauliflower, carrot, corn and peas. Cook on high for a couple of minutes then reduce heat to medium and stir occasionally.

Peel prawns and place them into a non stick pan on high heat, cook for a couple of minutes on each side until they turn red and are cooked. In a bowl add in around 1 cup cauliflower rice and top with prawns.
