It is time to get out of your comfort zone and try something new. This cauliflower porridge is super sweet and definitely takes cauliflower to a whole new level. A fabulous meal 1 option.

Ingredients:

  • 1/2 head cauliflower
  • 1/4 cup almond milk
  • 1 apple
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1/4 cup blueberries
  • 3 strawberries

Method:

Place cauliflower into a food processor and blitz until cauliflower resembles a rice consistency. Grate apple. In a small sauce pan add in cauliflower, almond milk, apple, cinnamon and vanilla. Bring it to boil, them reduce heat to low, put lid on the saucepan and simmer for 20 minutes whilst stirring regularly. You may need to add a little more milk if it dries up too much, but be mindful not to add too much. Once the cauliflower is soft place mixture into a bowl and top with chopped strawberries and blueberries.
