Ingredients:

  • 2 tsp olive oil
  • 2 egg whites
  • ½ cup (70g) grated sweet potato
  • 2 tsp low-fat cottage cheese
  • 1 slice turkey breast, chopped
  • 1 tsp chopped chives

Method:

Heat the oil in a small frying pan on medium heat.

Add the remaining ingredients and stir constantly for about 5 minutes, until the egg whites start to cook through.

Plate up and enjoy.
