Place cauliflower, olive oil, nutmeg, vinegar and water in the food processor and blend until combined.

Pour mixture into a saucepan, add quinoa bring to boil and simmer. Add in paprika and curry powder, salt and pepper to taste.

¼ cup olive oil
¼ cup apple cider vinegar
1 tsp nutmeg
1 tsp paprika
1 tsp curry powder
¼ cup quinoa
3 cups water
Salt and pepper to taste
