Mix quinoa, feta and capsicum together. Lay both slices turkey out flat, side by side. Spoon mixture onto both, wrap each one into a cylinder and enjoy.
* When you cook quinoa it doubles in size so, if you want a serving of ½ cup, use ¼ cup of raw quinoa.
½ cup cooked quinoa
2 tsp crumbled feta cheese
3 thin strips of capsicum, chopped into tiny squares
2 slices turkey breast, cut into strips
