Pre-heat oven to 180 degrees. Cook quinoa according to packet instructions or in your rice cooker.
In a bowl add quinoa, black beans, corn, finely chopped spring onion, salsa and coriander and mix well. Chop the top off the capsicum and carefully with a knife remove the inside flesh.
Spoon quinoa mixture into the capsicum and bake in the oven for 15 minutes until ingredients are warmed through.
