METHOD

Slice tofu into strips along with capsicum and cucumber. Fill a shallow bowl with warm water, submerge rice paper sheets in the water one at a time for a minutes, then place onto a plate and top with tofu, cucumber, capsicum, seeded mustard and spinach leaves. Roll each wrap up and enjoy.
