Cook barley as per instructions, adding a vegetable stock cube into the water. Transfer to a bowl once cooked.
Cut up some sweet potato thinly and warm through on sandwich press or pan, turning once. Once cooked cut into cubes.
Add all ingredients (except for smoked salmon) into bowl and mix well, plate up the barley then dress with smoked salmon and sprinkle with chilli flakes. Serves 4.

Capsicum – cut into small cubes
Juice of one lime
A teaspoon Oregano
A teaspoon Garlic
A teaspoon Paprika
A drizzle of Olive Oil
Salt & Pepper to taste
