Boil eggs until hard boiled. Cut in half and carefully remove yolks and throw away leaving nice egg white halves.
Peel and cut up sweet potato, then steam until tender. Place sweet potato in food processor along with onion, paprika, oregano, curry powder, Dijon mustard, garlic and salt. Then transfer mixture to a bowl.
If you want to be fancy you can pipe the mixture into the egg whites or just spoon it in. Sprinkle with a little more paprika.
