Pre-heat oven to 180 degrees Celsius. In a bowl mix the curst ingredients together well until combined. Spoon mixture into the tart tins then even the mixture out with your fingers so you have a nice even crust. Place in the oven for 10 minutes until lightly brown. Remove from oven and set aside to cool.

 

In a food processor add in banana, avocado, cacao, vanilla, and raspberries – mix until you get a nice mousse texture. Spoon mixture into each tart and dress up with a few raspberries on top. Eat straight away or store in the fridge.

 

Makes 6 small tarts

Crust
¾ cup Polenta
1 ¼ cup Almond Meal
1 egg
1 teaspoon Cinnamon
1 teaspoon Chia Seeds
½ teaspoon baking powder
¼ teaspoon salt
1/4 cup water
6 x small non-stick tart tins

Filling
2 bananas (chopped)
1 Avocado (ripe)
¼ cup Cacao
1 teaspoon Vanilla
½ cup raspberries (frozen is fine)
A few raspberries to decorate
