In a pan add rice bran oil, turkey mince, garlic, onions stir until mince is cooked. Add zucchini, carrot, mushrooms, tomatos, tomato paste, oregano, salt, pepper, water – bring to boil then rip apart basil leaves and add to pan, cover and simmer on low for around 20 minutes.

Serve on a bed of spinach leaves or some zucchini pasta.

500 grams Turkey mince
2 tsp Rice bran oil
2 cloves garlic minced
1 large onion chopped
1 x zucchini grated
1 x carrot grated
6 x button mushrooms chopped
1 x can crushed tomatoes
1 x 140 gram tomato paste
1 x tsp oregano
Salt + Pepper to taste
½ cup water
Handful of fresh basil
Chilli – optional
