Polenta may or may not be an ingredient you are familiar with, I know that I have only ever cooked with it a handful of times. It is used a lot in Italian cooking and is also known as Maize or Cornmeal. When you hear Polenta you probably immediately think of a hot creamy dish that accompanies some form or protein on your plate, so today I wanted to share with you my twist on Polenta with this rich chocolate tart with a Polenta crust to show you just how versatile Polenta is!

Polenta is also great for thickening up winter dishes, you can eat it as a porridge or as a substitute for mash potato and you can even make a great pizza base out of it.
Another great dish which is amazing for an entrée is to cook the polenta, pour it into a quiche dish and flatten it out, refrigerate it for an hour then cut the Polenta into small circles. Then bake or fry the rounds and top it with some mushrooms, onion and fetta or another combination of your choice….yummy!
If you are cooking Polenta the traditional way it is very easy to cook but needs a hands on approach for a good 20 minutes to avoid it from sticking to the saucepan.
