I don’t know what it is about fried rice but leave me unsupervised with a large serving and a side of duck pancakes with hoisin sauce and you might not see me for a couple of days! Seriously though I know fried rice can be a real favourite for many people (and yes I do love it as a treat very occasionally at my amazing local Chinese restaurant where I have been going since I was 7 years old) but your average serving is very high in both carbs and fat which is not a great combination if you are trying to lose weight, especially if consumed for dinner! As you probably know I love to take traditional recipes and create healthier versions of them and fried rice has been on my list for a while (as I get lots of requests for more savoury recipes). A few weeks ago I read about using cauliflower instead of rice and I was inspired!
My recipe for cauliflower fried rice doesn’t actually contain any rice at all but instead uses cauliflower to achieve the same texture and consistency as rice. Add some egg, beans, capsicum and Tamari sauce and you have an amazing replacement with no starchy carbs and significantly reduced fat content. My husband and kids LOVE fried rice more than I do so I served some up for them on Sunday afternoon and it was demolished within seconds! Had I served them up a plate full of cauliflower it would still be sitting on the bench, so its an excellent way to get your family eating more vegetables.
