Use peeler to thinly slice zucchini. Mix low fat cream cheese, lemon pepper, dill, together. Lay 2 slices of zucchini down slightly overlapping each other, lay salmon on top. Place a teaspoon of cream cheese mixture onto salmon and another teaspoon on the end of the zucchini, this will hold the roll together. Roll up and enjoy.

1/2 cup low fat cream cheese
1 tablespoon lemon pepper spice
1 tablespoon chopped dill (about 1 stalk)
300 grams Smoked Salmon – cut into strips the same width as zucchini
