Line a loaf tin with baking paper. In a small saucepan, heat the coconut oil, cacao, maple syrup, vanilla and salt over medium heat until melted and combined. Remove from heat.
Add the almonds, pepitas, sesame seeds, chia seeds, cacao nibs, cinnamon and coconut. Stir well and pour into a loaf tin.
Use the back of a teaspoon to spread the mixture evenly and transfer to the fridge to set for at least an hour.
Cut into bars.

1/4 cup (60mL) coconut oil

1 tbsp cacao powder

2 tsp pure maple syrup

1 tsp vanilla essence

Pinch salt

1/2 cup (60g) slivered almonds

1/4 cup (70g) pepitas (pumpkin seeds)

1/4 cup (40g) sesame seeds

1 tbsp chia seeds

1 tbsp cacao nibs

1 tsp ground cinnamon

1/2 cup (40g) desiccated coconut
