Remove the ends of the celery stalks and wash celery. In a bow, mash the avocado with a fork, then add chia seeds, capsicum, lemon juice and onion, and season with salt and pepper. Mix well, then spoon into the hollow of the celery stalks. Crunch and enjoy.
