Preheat the sandwich press or use a non-stick frying pan. Whisk the egg and parmesan together and season with salt and pepper. Pour onto the hot sandwich press and, with the lid up, cook for 3 minutes on each side. Transfer to a plate, top with the slice of turkey and avocado, roll up and enjoy.
