Slice chicken breast long ways to open up and prepare for stuffing.

On one end of the chicken breast layer mint leaves, sliced strawberries and sliced fetta then season with salt and pepper.

Roll chicken breast up to create roulade. Place 3 thin slices of prosciutto on the chopping board and wrap the chicken up.

On a low heat in a non-stick pan, place chicken in pan turning frequently for about 10-15 mins until chicken is cooked through. Slice and serve with rocket and strawberry salad.
